Part of healthy sustainable eating is cooking things at home from scratch. I bet cooking at home is way easier than you think! Once you get into making your own food from scratch you will never go back! It is both cheaper and tastier.
I will start with this delicious coconut granola recipe, which comes from my sister in Vancouver (in true granola fashion!)
It really is delicious and super easy to make!
(makes about 10 cups)
6 cups Rolled oats (I use a mixture of regular oats, rolled spelt, rolled bran, etc)
1 1/2 cups Nuts of your fancy, chopped
1 1/2 cups Shredded dried coconut
1 cup Honey
1/4 cup Water
1/2 cup Coconut Oil
1 tablespoon Vanilla extract
1/2 teaspoon Salt
..and whatever dried fruit and extra nuts you want… perhaps some raisins or dates…
Heat oven to 250 F.
Combine dried goods.
Combine & Heat: honey, water, salt in pan… stir in coconut oil & vanilla.
Pour over dry mix.
Spread out over cookie sheets.
Bake for 1 hour, stirring/turning every 20 mins.
